Ingredients

  • ** For Marinate: **
  • 2 pounds boneless, skinless chicken breasts
  • 1 1/2 cups buttermilk
  • 2 Teaspoon Kosher salt
  • 2 Teaspoon freshly ground black pepper
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder
  • 2 Tablespoon Siracha
  • ** Dried Coat **
  • 1 1/2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1 Teaspoon Baking Powder
  • 1 Tablespoon Salt
  • 1 Teaspoon Freshly Ground Pepper
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder
  • 1 Teaspoon Smoked Paprika
  • Oil, for frying
  • ** The Sauce & Sandwich Ingredients **
  • 1/4 cup mayonnaise
  • 1/2 Teaspoon Ketchup
  • 6 finely chopped pickles
  • Chopped tomato
  • Lettuce
  • Pickels
  • Sliced Onions

Steps

  1. Cut the chicken breasts in half lengthwise, making 4 equal pieces. Put one sheet of plastic wrap on a cutting board; put a piece of chicken in the center of it and top with another sheet of plastic wrap. Pound the chicken with the flat side of a meat mallet, starting from the center and working your way out to the edges, until the chicken is 1/4 inch thick.
  2. In a medium bowl whisk together the buttermilk, siracha, paprika, onion powder, garlic powder, salt, and black pepper.
  3. Add the chicken to batter and marinate for 2 hours or overnight in the refrigerator. Bring the chicken to room temperature before frying.
  4. In a deep- fryer or a pot heat to 375 degrees F.
  5. Remove the chicken from the marinade then set aside.
  6. In a large tray, whisk the flour, cornstarch, baking powder, salt, freshly ground pepper, garlic powder, onion powder, smoked paprika.
  7. Dust the chicken with the flour mixture, and then dunk in the batter to coat. Remove the chicken from the batter and dust the chicken again with flour mixture, then shake gently.
  8. Slowly drop the chicken into the hot oil. Fry for about 8 minutes until cooked through and golden on the outside.
  9. For the sandwich: Butter both sides of each bun. Toast lightly in the pan until golden brown and warm.
  10. In a small bowl, stir together the mayonnaise, ketchup, and the chopped pickles. Smear on the cut sides of the bun bottoms, and then add the chicken, pickles, lettuce, tomatoes, onions, more sauce, and the bun tops.
