Recipe Description
Sauce Arachide Peanut Stews This flavorful Ivory Coast-style sauce consists of peanut butter, water, hot chili peppers, tomatoes, garlic, and onions. Most commonly, it is used as a thickening sauce in chicken dishes. It is typically served over long-grain white rice.
Peanut-based stews are very common in West Africa, and I’ve made quite a few of them. This is a simplified version that was very easy to make vegan by just substituting vegetable broth for chicken broth. The original recipe called for serving it with ground beef, but you can serve it with any pre-cooked vegetables or meats you want – or even add some more water and simmer it in the sauce. I did just that with some vegan chicken strips.
Ingredients
- ½ kg chicken, clean and cut into pieces
- 3 tablespoons peanut paste
- 100ml vegetable oil or peanut oil
- 2 fresh tomatoes, crushed
- 1 tablespoon of tomato puree
- 2 onions, chopped
- 1 bunch green onion, minced
- 2 cloves garlic,
- A chilli (optional),
- black pepper
- 1 stock cube or Maggi
- 1 liter of water (hot water recommended).
- You can add vegetables of your choice: potatoes, carrots or pumpkin
Steps
- Season the chicken with a stock cube, black pepper and salt.
- Heat the vegetable oil in a pan and fry the chicken until brown. Remove and set aside
- In the pan, add the pureed tomatoes, tomato paste, onions, green onion, garlic and black pepper, sauté for 10 minutes.
- Add the water and the peanut paste. Let simmer for 20 minutes.
- Return the fried chicken in the sauce and add the stock cube, chilli and vegetables if you want. Let cook for another 20 minutes.
- To finish the soup, add salt and pepper to taste.
- Serve the peanut sauce with white rice or Tô.
- Note: Peanut soup should be cooked in a deep pot, as the soup rises when cooked.
- Do not replace the pot lid once the peanut paste is added to prevent the sauce from spilling out.
